Four meals for a family of four from one organic chicken
If you eat chicken make sure you source one that has been reared in a way that is conducive to the species, better for the chicken, better for you and better for the environment.  A whole organic chicken provides enough meat to make a number of meals plus bones for a nourishing bone broth.

Boxing Day Picnic

..

Christmas Day often keeps us indoors - so much cooking and eating! Come Boxing Day the great outdoor beckons; a long walk and a picnic is hard to beat. The best Boxing Day picnic I ever had was on the beach, perched on rocks with the silver grey waves below, soft spray on our faces and hopeful seagulls soaring above.

A thermos of hot soup is essential along with one large frittata made from Christmas Day leftovers. Add to this some goodies stashed away from the Friday 23rd December market: bread, cheese, salads, coffee & chocolates and your picnic is complete.

The pumpkins are back in town...

.

When you scoop the flesh out of your halloween pumpkin make sure it is saved.  Previous years have seen a huge waste of pumpkin as halloween jack o lanterns are carved and the flesh thrown away. A staggering figure of 18,000 tonnes was estimated to be thrown away last year! A 2015 survey noted that over 50% of respondents would have used the flesh and seeds if they knew how.  So below are a couple of recipes from different cultures that show the diversity of the pumpkin.

Ashurst Organics Pumpkins

Pumpkin soup works beautifully with the Thai flavours of coconut, lemon grass, kefir lime leaves, chilli and basil.  Sikil P'ak a pumpkin seed dip from Mexico makes a nutritious spicy dip. In the Indian lentil stew the wonderful spices are absorbed by the pumpkin, any leftovers are even better the next day.  Bread, in many cultures,  is a great way of using up leftovers from lentils to beer to seeds, the pumpkin puree gives the rolls a golden hue.

You can buy pasta made from buckwheat, corn and quinoa as well as wheat cook the pasta and add loads of other ingredients especially lots of vegetables.

Its really easy and fun for children to help make pita bread so if you have the time make up a couple of batches and keep them in the deep freeze ready to thaw and pop in a filling.

Frittatas are endlessly versatile and if you are short of time, there’s no need to make them from scratch, they can be made in minutes with fridge leftovers..

 


 

August picnic

Gather a scrumptious picnic together from the market stalls; superb raised pies, delicious cakes, amazing artisan bread, local cheeses, spiced Indian food, Mediterranean salads, Oriental dumplings, energy balls, chocolate... Or maybe you could create a picnic using some of the recipes below; either way this is the time of year to get together, fill a basket with food, grab a few blankets and head off for a summer picnic.
